Wheatberries are yumm.
Soak 1 cups of wheatberries in water overnight.
Discard water.
Place wheatberries in a large pan with fresh water an inch and a half above the grains.
Boil for 50-60 min and stir occasionally.
Drain and let cool in large bowl.
Add:
2 tsp rice vinegar (or other variety)
Pepper
Optional (as in photo):
1/2 Tbsp chopped dried cranberries
3 Tbsp fresh parsley
1/2 tsp fresh grated ginger
2 drops olive oil
Wheatberries have a chewy, poppy, texture
-Double the recipe and freeze up to one month
-If you don't have the time to soak, its alright, just cook a bit longer
